Zia's Pizza
Zia she making 2 pizzas with this

Base
2 sachets dried yeast
3 cups plain flour

(is better the "high protein" flour in the big bag)
Salt
Mixed Herbs or Italian Herbs

Garlic powder or granules
4 tablespoons olive oil
1 cup warm water

Topping
Carton of Leggo's pizza sauce.
(You no say nothing you say is Zia's sauce.)
1 big fat mozzarella (500g)
anchovies, olives, salami
(or anything else you like it)

1. You get the bowl you put in flour, yeast. You sprinkle in bit of salt, herbs, lots of garlic.
You mix a bit.

2. You pour in dry yeast, warm water, oil all together (you not look at instructions on yeast packet - you trust Zia). You mix a lot.

3. You tip all out on to table. You squash and roll with the hands until is smooth.
Then you poke in the finger. If hole disappearing, is enough.

4. You put in oiled bowl in warm place, you let it grow (1 hour or more).
In winter, Zia she warm the oven a bit, then put bowl on open oven door.

5. When is grown, you tip it out and punch it hard. Then you break in two, and squash and pull to fit oiled pizza pans.

6. You put on sauce, then cheese, then toppings.

7. You cook in very hot oven (Zia she use 240°C) for 10 minutes. Zia she turn the pizza pan around during cooking because it cook too fast at the back.

8. You eat. You make the skinny ones eat more.
